NO-CRUST SMOKED SALMON QUICHE

This is the recipe I used for an after wedding brunch a few weeks back. It came
from my trusty book Wake up and Smell the Coffee by Laura Zahn. I love the
breakfast/brunch recipes in this book--all very tasty and made from scratch.

If you don't have smoked salmon available, this can be made without it and it
still tastes delicious. If I had asparagus I would try that too or even spinach if
I thought I could get away with it!

I have discovered that you can't fill a regular 9 inch pie plate more than 2/3
full with this recipe or it will spill over when it puffs up during cooking. The
recipe calls for a large pie pan (maybe they mean a deep pie pan?) or a regular
quiche pan. I used my 9 inch pie plates but I didn't fill them all the way.

I tripled the recipe and kept 2 for us, 1 to share. I think sharing is the best part
of cooking! By the way, that is my 11 year old putting these together--it's easy!







NO-CRUST SMOKED SALMON QUICHE

4 eggs, beaten
1/4 cup butter, melted
1/2 cup baking mix (like Bisquick)
1 1/2 cups milk
1/2 cup grated sharp cheddar cheese
1/2 cup Swiss cheese, grated
3/4 cup flaked, smoked salmon

Beat the eggs, butter, baking mix and milk together with a wire whisk.

Butter a large pie pan or quiche dish and pour the egg mixture in.

Dot the mixture with the cheese and salmon, pressing down lightly to
submerge the cheeses and salmon.

Bake at 350 degrees for approx. 45 minutes.

Cut in wedges to serve. Makes 6-8 servings.

Oh, yum, I have to make that, even though smoked salmon is very expensive here. I don't know what I could substitute for the Bisquick, though. We don't have mixes like that here.
