FROSTED STRAWBERRY- BANANA SMOOTHIE

This recipe is from the cookbook Choices: Quick and Healthy Cooking Book
The nice weather always makes me think of summer: easy to prepare foods made 
with lots of fruit and vegetables. I changed a couple of things with this recipe since 
it originally called for club soda and it just wasn't very tasty. You could also substitute
yogurt for the ice cream to make it even healthier. I also used a food processor and 
it worked fine instead of a blender to mix everything.

My husband came home for a bite to eat between jobs and drank 2 full glasses of 
this instead of eating. We'll see if he is ravenous at dinnertime!



FROSTED BANANA-STRAWBERRY SMOOTHIE

2 bananas, cut into chunks
1 1/2 quarts orange juice
2 cups frozen strawberries, partially thawed
4 ice cream scoops of vanilla ice cream.

In blender, combine bananas and 1 cup of orange juice. Blend until smooth and
pour into another bowl. 

In the same blender, combine strawberries with 1 to 2 cups orange juice, 4 scoops
of ice cream and blend until smooth. Pour strawberry mixture in with banana mixture.

Add remaining orange juice and mix well with wire whisk. Serve well chilled with
orange or strawberry slices for garnish.

Makes approx. 3 quarts.

Yum! Smoothies are one of our favourite snacks. Today my daughter made banana smoothies just using bananas and milk. They were great, though I like them with berries too.

delicious....if you want to be extra healthy, substitute the ice cream for a flavour of yogurt you like and a handful of ice cubes and blend.

Kate--smoothies are such a great way to pack the nutrition in and they are so easy to take along with you and drink too.

Niki--yes, I sometimes use yogurt and it is delicious too. I just opened the freezer to put the strawberries away and the ice cream called my name!
